Ingredients
- 3 ripe bananas, mashed
- 1/2 cup almond butter
- 3 large eggs
- 1/2 cup vanilla protein powder
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine the mashed bananas, almond butter, eggs, honey, and vanilla extract. Mix until smooth.
- Add the protein powder, baking soda, and salt to the banana mixture and stir until just combined.
- Divide the batter evenly among the muffin cups, filling each about three-quarters full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
