Ingredients
For the crust:
- 1 cup crushed whole-grain biscuits
- 1/4 cup rolled oats
- 1/4 cup melted coconut oil
For the filling:
- 2 cups low-fat cream cheese
- 1 cup Greek yogurt
- 3/4 cup vanilla protein powder
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 2 eggs
- Juice of one lemon
Instructions
- Preheat your oven to 325°F (163°C). Combine crushed biscuits, rolled oats, and melted coconut oil in a bowl; mix until well incorporated. Press the mixture into the bottom of a springform pan to form a firm, crispy crust.
- In a large mixing bowl, blend the cream cheese, Greek yogurt, protein powder, honey, vanilla extract, and lemon juice until smooth.
- Add eggs one at a time, beating just enough to incorporate into the mixture without overmixing.
- Pour the filling over the prepared crust and smooth the top with a spatula.
- Bake for 50 minutes, or until the center is set but slightly wobbly. Turn off the oven and let the cheesecake cool inside for 1 hour with the door slightly open.
- Refrigerate for at least 4 hours, or overnight, before serving.
