Protein Muffins
Description
These protein muffins are the perfect blend of sweetness and nutrition. They are made with whole wheat flour, protein powder, mashed banana, and blueberries, providing a nutrient-dense snack that supports muscle recovery and keeps you energized throughout the day.
Ingredients
- 1 cup whole wheat flour
- 1/2 cup protein powder (vanilla or plain)
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2 large ripe bananas, mashed
- 1 large egg
- 1/4 cup Greek yogurt
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 1 cup fresh or frozen blueberries
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or spray with non-stick cooking spray.
- In a large bowl, combine the flour, protein powder, baking soda, baking powder, and salt.
- In a separate bowl, whisk together the mashed bananas, egg, Greek yogurt, honey or maple syrup, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the blueberries.
- Spoon the batter evenly into the muffin tin, filling each cup about 3/4 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
