Ingredients

  • For the crust:
  • 1 cup almond flour (4 oz or 112g)
  • 1/4 cup coconut oil, melted (2 oz or 60ml)
  • 2 tablespoons granulated erythritol (0.9 oz or 25g)
  • For the filling:
  • 16 oz cream cheese, softened (453g)
  • 1/2 cup granulated erythritol (3.5 oz or 100g)
  • 2 large eggs (3.5 oz or 100g)
  • 1 lemon, zested and juiced (2 oz or 56ml juice)
  • For the raspberry swirl:
  • 1/2 cup raspberries (2 oz or 57g), fresh or frozen
  • 2 tablespoons granulated erythritol (0.9 oz or 25g)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
  2. For the crust, mix almond flour, melted coconut oil, and erythritol in a bowl. Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes, then remove from the oven and let cool.
  3. For the filling, beat the cream cheese with erythritol until smooth. Add eggs, one at a time, beating to combine. Mix in lemon zest and juice.
  4. Pour the filling over the cooled crust. Dot the top with raspberries and swirl them through the filling using a knife or toothpick.
  5. Bake for 35 minutes, or until the filling is set but still slightly jiggly in the center. Cool completely in the pan on a wire rack, then chill in the refrigerator for at least 3 hours before slicing into bars.
