These protein muffins are the perfect blend of sweetness and nutrition. They are made with whole wheat flour, protein powder, mashed banana, and blueberries, providing a nutrient-dense snack that supports muscle recovery and keeps you energized throughout the day.


Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup protein powder (vanilla or plain)
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 large ripe bananas, mashed
  • 1 large egg
  • 1/4 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen blueberries


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or spray with non-stick cooking spray.
  2. In a large bowl, combine the flour, protein powder, baking soda, baking powder, and salt.
  3. In a separate bowl, whisk together the mashed bananas, egg, Greek yogurt, honey or maple syrup, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the blueberries.
  5. Spoon the batter evenly into the muffin tin, filling each cup about 3/4 full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
