  • 1 cup cherry tomatoes, halved (5 oz or 140g)
  • 1/2 cucumber, sliced (4 oz or 112g)
  • 1/4 red onion, thinly sliced (1 oz or 28g)
  • Additional olive oil and lemon juice for dressing

Instructions

  1. Marinate the chicken breasts with lemon juice, olive oil, garlic, herbs, salt, and pepper. Let sit for at least 30 minutes in the refrigerator.
  2. Preheat the grill to medium-high heat. Grill the chicken for 6-7 minutes on each side or until fully cooked and the internal temperature reaches 165°F (75°C).
  3. Once cooked, let the chicken rest for a few minutes before slicing it thinly.
  4. In a large salad bowl, toss the salad greens, cherry tomatoes, cucumber, and red onion.
