Ingredients
- 1 pound raw shrimp, peeled and deveined
- 8 whole-wheat tortillas
- 2 cups shredded cabbage
- 1/4 cup fresh cilantro, chopped
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 1 tablespoon olive oil
- Juice of 1 lime
Instructions
- In a bowl, combine chili powder, paprika, garlic powder, cumin, salt, and pepper. Toss the shrimp with olive oil and spice mix until coated.
- Heat a grill or skillet over medium-high heat. Grill shrimp for 2-3 minutes per side, until opaque and cooked through. Set aside.
- In another bowl, toss shredded cabbage with lime juice and cilantro. Season with salt and pepper to taste.
- In a food processor, blend 1 ripe avocado, juice of 1 lime, and a pinch of salt until smooth. Adjust seasoning as needed.
- To assemble, warm the tortillas and fill each with cabbage slaw, grilled shrimp, and a dollop of avocado crema.
- Serve immediately with extra lime wedges on the side.
