Ingredients

  • 2 salmon fillets (6 oz each)
  • 2 medium sweet potatoes, peeled and cubed
  • 2 cups steamed broccoli
  • 1 tbsp olive oil

  • Salt and pepper to taste
  • 2 tbsp tahini
  • 1 lemon, juiced
  • 1 garlic clove, minced
  • Water to thin dressing

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place sweet potato cubes on a baking tray. Drizzle with olive oil, season with paprika, salt, and pepper, and roast for 25-30 minutes, flipping halfway through.
  3. Season salmon fillets with salt and pepper, then bake on another tray for 12-15 minutes or until fully cooked.
  4. Steam broccoli for 5-7 minutes until crisp-tender.
  5. Combine tahini, lemon juice, garlic, and water in a bowl, stirring to desired consistency. Add salt to taste.
  6. In bowls, arrange roasted sweet potatoes, steamed broccoli, and salmon fillets. Drizzle tahini dressing on top and serve.
