Ingredients
- For the crust:
- 1 cup almond flour (4 oz or 112g)
- 1/4 cup coconut oil, melted (2 oz or 60ml)
- 2 tablespoons granulated erythritol (0.9 oz or 25g)
- For the filling:
- 16 oz cream cheese, softened (453g)
- 1/2 cup granulated erythritol (3.5 oz or 100g)
- 2 large eggs (3.5 oz or 100g)
- 1 lemon, zested and juiced (2 oz or 56ml juice)
- For the raspberry swirl:
- 1/2 cup raspberries (2 oz or 57g), fresh or frozen
- 2 tablespoons granulated erythritol (0.9 oz or 25g)
Instructions
- Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
- For the crust, mix almond flour, melted coconut oil, and erythritol in a bowl. Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes, then remove from the oven and let cool.
- For the filling, beat the cream cheese with erythritol until smooth. Add eggs, one at a time, beating to combine. Mix in lemon zest and juice.
- Pour the filling over the cooled crust. Dot the top with raspberries and swirl them through the filling using a knife or toothpick.
- Bake for 35 minutes, or until the filling is set but still slightly jiggly in the center. Cool completely in the pan on a wire rack, then chill in the refrigerator for at least 3 hours before slicing into bars.
