Ingredients

  • 1 pound chicken breast, diced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) coconut milk
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish


Instructions

  1. In a large skillet, heat olive oil over medium heat. Add diced onions and cook until translucent.
